CHRISTMAS EVE BRAAI

A favorite South African meal,   a Braai, with some salads and off we go.  The Big piece is a quarter of a lamb.    Boere Wors and sausage.  Yum yum.

HELPING HANDS

A little bit of good some of the community are trying to do. What a terrible thing hunger is, and to think that more than half the world are in need. These poor little souls have nothing, maybe even at night they have nothing to eat. I suppose that every little bit helps.

The feeding scheme at Robin Hills Primary School started by Janet Hunt who, being a teacher there and a member of our congregation, saw the need for sandwiches to be made for the children who were coming to school, having had no breakfast and many - no lunch. This has been an ongoing commitment from the Congregation.

MABOGO A THUSO - HELPING HANDS
Was formed at our church by our own minister Elisha Moloi to reach out to the community. Having heard of the desperate need for the learners at Robin Hills we met with staff where we were able to ascertain their needs.

We learnt that even though the school is being subsidized by the government witha porridge supplement, they were still not able to give the children a substantial meal every day. Because of the economy and the hard times that many families are experiencing the total amount of learners in need is up to 200.

We have thus undertaken to supply the school with 50 loaves of bread, together with fresh vegetables and Orange Juice which we deliver once a week. This list changes as we contact them regularly to make sure that we are supplying them with a varied diet. 'Granny' who greets us each week with such warmth is the very special lady in the kitchen, who does the cooking and feeds the children every day with much love and care.

VISITORS AT THE FARM

We had people for lunch on Sunday for lunch. Fred, Maureen, Tania, Rudi, Macyla, and the Cantello there were 4 of them, Tylar and Chelsy came with them, it is good to have children around keeps you on your toes. I know I always say it Macyla is a big baby, had two teeth and is not 6 months old yet. She was born 15 Sept. 2009. 5 months old, at the rate she is going I am sure she will miss school and go straight to University !!!!!! The weather was not too bad, we have had a lot of rain this year, as every where in the world seems to be have a lot of something.
We ate heartily, Roast whole rump, potato salad, butter bean salad, I made a lovely, even though I say so myself, Tomato, onion, celery and chuncks of cream cheese. Home made bread (don't you believe the bread story, I buy the dough from the bakery, naughty girl).

ZIPLOC OMELETTE

I suppose you all know about this omelette, this is for those who don't know.

This works great!!!

Good for when all your family is together. The best part is that no one has to wait for their special omelette!!!

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than2)

Shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake.

Make sure to get the air out of the bag and zip it up. Place the bags into boiling water for exactly 13 minutes.

You can usually cook 6-8 omelettes in a large pot.

For more, make another pot of boiling water.

Open the bags and the omelette will roll out easily.

Be prepared for everyone to be amazed.

Coconut Drops

5 tablespoons sugar 1 tablespoon flour
5 tablespoons castor sugar egg whites
¼ teaspoon vanilla essence 1 cup shredded coconut

Sift together the sugars and flour. Beat egg whites until foamy. Gradually add dry ingredients 2 tablespoons at a time. Beat until stiff and then fold in vanilla and coconut. Drop from a teaspoon onto an ungreased paper lined baking sheet. Bake at 180°C for 20 minutes or until golden brown. Makes about 8 dozen cookies.

Giving it another go to day, but thought I would practice with an Apple Pie, or something recipe,


Apple Betty

INGREDIENTS
4 cups thinly sliced apples
1/4 cup orange juice
3/4 cup all-purpose flour
1 cup white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie plate.
Mound sliced apples in the pie plate. Sprinkle with orange juice.
In a medium bowl, mix the flour, sugar, cinnamon, nutmeg, and salt. Cut in butter until the mixture resembles coarse crumbs. Scatter over the apples.
Bake in preheated oven for 45 minutes. Serve warm.
